What is the size of the Martellato Polycarbonate Chocolate Mold, Half-Round Bar Log?

The Martellato Polycarbonate Chocolate Mold is designed to create half-round bars that are 39mm in width. This size is ideal for crafting elegant chocolates that have a professional look and feel. Whether you are a home chocolatier or a professional pastry chef, these dimensions allow for a perfect balance between portion size and intricate design, making them suitable for various applications in dessert presentations.

What materials are used in the construction of the Martellato chocolate mold?

The Martellato chocolate mold is made from high-quality polycarbonate, which is a durable and resilient material. Polycarbonate is favored for its clarity, allowing you to see the chocolate as it sets, and its ability to withstand repeated use. This mold is designed for both home and professional kitchens, ensuring that you will achieve a smooth finish on your chocolate creations while benefiting from the durability of the material during continuous usage.

Can the Martellato chocolate mold be used for other confections besides chocolate?

Yes, the Martellato Polycarbonate Chocolate Mold can be used for a variety of confections, including gelatin, fondant, and marzipan. The versatility of polycarbonate allows it to withstand different temperatures, making it a useful tool for any confectionery endeavor. For instance, if you're looking to create unique desserts for special occasions, using this mold for a gelatin dessert can lend an appealing shape and texture to your creations.

How do you properly clean and care for the chocolate mold?

To maintain the quality of your Martellato chocolate mold, it is recommended to gently wash it with warm soapy water using a soft cloth or sponge. Avoid abrasive cleaners or scouring pads, as these can scratch the surface. After washing, rinse thoroughly and dry with a lint-free cloth to prevent water spots. By caring for the mold properly, you'll enhance its longevity and ensure that each chocolate creation retains its polished look.

Is the Martellato chocolate mold dishwasher safe?

While the Martellato Polycarbonate Chocolate Mold is not specifically stated to be dishwasher safe, handwashing is recommended to preserve the integrity of the mold. The heat and harsh detergents of a dishwasher may cause the polycarbonate to become cloudy or scratched over time. By handwashing, you ensure that the mold stays clear and maintains its professional quality for chocolate making.

What types of chocolates can be made using the Martellato chocolate mold?

You can create a wide range of chocolates using the Martellato Polycarbonate Chocolate Mold, including tempered chocolate bars, pralines, and filled chocolates. The sleek design and uniform shape aid in presentation, helping you achieve professional-looking results. Whether you're crafting dark, milk, or white chocolate, this mold accommodates a variety of recipes, allowing you to showcase your creativity and culinary skills.

How does polycarbonate affect the chocolate setting process?

Polycarbonate molds, like the Martellato, promote an excellent cooling process, which helps the chocolate to set quickly and evenly. This results in chocolates that are shiny and have a good snap due to the proper crystallization of the cocoa butter. When creating professional-looking chocolate pieces, the clarity and non-stick properties of polycarbonate molds provide an advantage by ensuring that the intricate details are preserved perfectly.

What is the benefit of using a half-round design in chocolate molds?

The half-round design of the Martellato chocolate mold allows for versatility in presentation and filling options. This shape is not only aesthetically pleasing but also practical for layering different flavors or fillings. For example, you can fill half with a dark chocolate ganache and the other half with fruit puree, creating a stunning contrast that delights the palate and eye alike.

Can I use the Martellato mold for making frozen desserts?

Yes, you can use the Martellato Polycarbonate Chocolate Mold for frozen desserts as well. Its sturdy construction can handle cold temperatures, making it suitable for ice creams, mousses, or frozen yogurts. This opens up a new realm of creative possibilities for dessert preparation, allowing you to design unique summertime treats or sophisticated frozen desserts for upscale dining experiences.

Martellato Candy Molds MA1997 Editorial Review

This polycarbonate mold is of high quality and made to last with a rock-solid material that produces smooth and shiny results when following best practices. The shape of the mold is trendy and easy to polish. Some users had difficulties with the chocolate coming out but found that leaving it longer in the fridge and then banging it upside down on a cutting board worked well. The only downside was that the size of the mold is more suitable for small bars than individual chocolates. Overall, customers loved this mold and would buy from the brand again.
